At Henne Kirkeby Kro, the eccentric chef creates dishes using mostly oysters, mussels, and other shellfish in a setting that exudes total seclusion and contemplation – if it weren’t for Cunningham’s infectious joie de vivre. Those with an interest in design should make the short detour to architect Poul Henningsen’s Henne Möllle Å Badehotel just as the sun dips down to the Danish horizon.

Røros

Norwegian World Heritage Site Røros is not only one of the best-preserved cultural communities in the Nordic region, but is also a town with a strong food heritage on the menu. Go on a local food safari, make a stop for a sweet-toothed break at Kaffestuggu, and finish off at restaurants such as Vertshuset Røros or Vauldalens Fjellhotell.

Lofoten

Norway is the world’s largest exporter of fish, and where else would you go to experience a real fish market than the country’s fishing epicenter: Lofoten. The region’s cool, clear waters provide the best breeding ground for species such as blue mussels, scallops, crabs, and other crustaceans. But the real blockbuster, of course, is the Arctic cod known as skrei, which is in season from January to April. Two high-quality fish restaurants in Oslo and Stavanger, respectively, are Lofoten and Straaen.

Jämtland

Self-sufficiency, traditional artisan food, and ingredients from the mountains are just some of the characteristics of Jämtland gastronomy. The best example is Fäviken Magasinet, now world-famous thanks to Netflix, where Magnus Nilsson has prevailed upon foodies from all over the globe to make a pilgrimage “to the end of the world.” Someone who has opted instead to bring his food world to the people of Jämtland is Japanese chef Tsukasa Takeuchi. His millimeter-precise sushi creations are beautifully served at Take Mikado at the former military base in Östersund.
