Serve it together with a brioche with whitefish roe, avocado and smetana.
Roederer Cristal 2009
Cristal in the glass, salma salmon rolls with lemon, truffle and ricotta on the plate. Roederer Brut Premier works just fine as a budget choice.
Krug 2002
An amazing champagne that I would love to serve with porcini- stuffed quail. A cheaper choice would be Bollinger Special Cuvée.
