The hamburger boss’s favorite burgers in Miami

To say that Richard Bergfors, CEO of Swedish hamburger chain Max, is obsessed with burgers is something of an understatement. He eats at least one burger every day. Even on Christmas Eve. In between, he travels the globe in pursuit of the perfect burger. Here he shares with us his favorites in Miami.

Richard Bergfors, CEO of Swedish hamburger chain Max and a huge lover of hamburgers all around.Where did your love of hamburgers come from?

My parents started Max hamburgers before I was even born, so my whole childhood basically revolved around hamburgers. My very earliest memories are of sitting at the dining table as we tested the latest bread, dressings, and ingredients. And I remember that when my school friends went to Legoland, I hung out with my dad on road trips around America, trying out new burger places. So you could say that the burger is a beloved family member that has always been at my side. It might sound a bit wacky to some, but that’s the simple truth.

What is it about burgers that makes you love them so much?

Hamburgers never go out of style and you can customize them in millions of ways. Just by replacing the bread, changing the ingredients in a dressing or swopping the meat, you can have a completely different taste experience. Also, making a great burger is all about technical expertise, because all the flavors have to marry together in the same bite. It is a skill that not everyone can master. But apart from the actual taste, there is something about hamburgers that is social and unpretentious that I think is incredibly beautiful.

Here are Richard’s favorite burgers in Miami:

Le Tub

You absolutely must visit the legendary Le Tub if you are in Florida. It was voted # 1 by GQ magazine on a list of 20 hamburgers you have to eat before you die. I can only agree. In my opinion, this is where you will find some of the absolute best hamburgers in the entire world. The choicest juicy short loin of beef with clean and simple flavors, soft bread with sesame seeds, American cheese, onion, and iceberg lettuce. No dressing is needed, because the meat tastes so great by itself. Simple, juicy, and full of flavor. Truly “a burger to die for”.

This place is legendary and serves Cuban hamburgers that you simply have to try when you’re in Miami. The meat in the burger is a blend of peppers and beef. The whole thing is topped off with super-thin chips they call “shoestring fries” and their homemade signature dressing. Strong and incredibly good. One satisfied customer here is Barack Obama, no less.

Keg South

I love the hamburgers at Keg South. They are burgers without any intricacies that are stripped down, simple, and absolutely amazing. The meat is charcoal grilled and has a really great flavor and perfect texture, and is topped with American cheese, onions, mayonnaise, iceberg lettuce, tomato, and finally a soft and simply fantastic burger bun. The place looks like a shabby hovel, but the hamburgers are really delicious.

Cheeseburger Baby

A really good burger joint in South Beach is Cheeseburger Baby. The burgers are simple, tasty, juicy, and fresh. When I was there last, I chose a Cheeseburger Baby with bacon and jalapeños for an extra kick. Super good and well worth a visit.

Pincho factory

I was introduced to this place by a friend who is as hamburger crazy as I am. If you love hamburgers and Mexican food, this is the place for you. You can even get something as exciting as a quesadilla burger here. This consists of fantastically juicy and flavorsome meat with a really thin quesadilla (thin tortilla bread with melted cheese in between) as the burger bun. It comes with guacamole, salsa, onions, and sour cream. A very different but really good hamburger.
