Copenhagen’s new matcha bar
Matcha is one of the oldest variants of green tea and the most exclusive. It is a fine ground powder made from specially grown, carefully processed green tea. This green drink is used in traditional Japanese tea ceremonies and has gained its superfood status thanks to its many health-promoting properties. Matcha is in fact full of amino acids and antioxidants, which help to prevent cancer, and chlorophyll, which suppresses hunger and improves the oxygen flow around the body. Matcha tea also lowers the level of cholesterol in the blood – all properties which prolong life, increase energy, promote concentration, and boost the metabolism.
And it tastes good too! At least, it does when it is served at the newly opened byoh Matcha bar.
“How would you like your matcha?” says experienced matcha maker, Michael Mølgaard, who recently opened the doors of the byoh Matcha Bar in Vesterbro, Copenhagen. “You can try a traditional hot tea, a matcha latte with cashew milk, or how about an iced vanilla matcha latte? That one is very popular.”
The matcha latte with cashew milk has a fresh, slightly sweet taste, without any hint of bitter tea notes. At byoh, they only use matcha of the highest quality, Ceremonial Grade, which is used in the Japanese tea ceremony. It is 100% organic, hand picked, and comes from the best region in Japan, the Kagoshima Prefecture. During processing, the stem and veins are removed from the leaf, which takes away the bitterness.
“Many people may think that tea is not for them, so give it a wide berth, but that is such a shame, because matcha can be an incredible number of things,” Mølgaard says.
Even those who do not normally drink tea are still catered for in the matcha bar, which has all sorts of other products. Mølgaard himself is responsible for making for the bar’s matcha skyr with granola, matcha granola bar, and matcha chocolate, while he also makes the cashew milk every morning.
As a former elite sportsman, he has a great interest in nutrition and health, and he became a matcha fan himself during a trip to Los Angeles. He has been importing matcha for his own use for a long time, but since 2013 he has sold matcha products through his online store, byoh (be your own hero), and he delivers his matcha to Emmery’s, Raw42, and fashion and lifestyle events, to name but a few. With the opening of his matcha bar, he hopes to be able to increase awareness of the properties of matcha and inspire people to live a healthier life.
It does not take much. A single cup of good quality matcha tea has the same nutritional value as 12 cups of regular green tea, and the beneficial effect of matcha is achieved by drinking three cups, or otherwise ingesting 3 grams per day. If you choose Food Grade matcha, the healthy powder can be used in products such as juice, smoothies, ice cream, chocolate, cakes, and milkshakes. Making it a little healthier to sin.
